In Spanish, Pollo a la Brasa means chicken cooked over embers. It is a whole chicken cooked in a rotisserie charcoal oven. The process of slow cooking makes a deliciously crispy on the outside, juicy on the inside chicken dish. The result is a healthy flavorful chicken which has been seasoned days before cooking begins. You can find a pollo a la brasa restaurant on every corner in the capital of Peru. As a matter of fact, pollo a la brasa has been named a National Heritage in Peru.

YUCCA

Try our Signature Yucca Fries instead of french fries. They are unlike any in the area. The fries are smooth and creamy in the middle and the outside is wonderfully light and crisp. They don't need a dipping sauce, but you could dip them in the salsa verde.
